Rice Puddding :)

Have actually never made rice pudding before, so here goes.

1 cup Brown Basmati Rice
1/4 cup Cashews
1/4 cup Mulberries or raisins.
1/2 tbs Cardamon whole
400ml tin Coconut Milk (this was a very rich tin)
600ml water
1/4 tsp nutmeg
1/2 bean Vanilla
1/4 cup Honey/sugar (don't have a sweet tooth so if you do then double the sugar)
salt to taste.

Add all ingredients together and soak for a couple hours (for the berries to soak up as well as the spices).
Cooked for 60min.
