cooked indirect hot and fast in a 650 f kettle.
flip and poke at them with BBQ fork all over , sprinkle with Greek seasoning blend then squeeze fresh lemons on
them. repeat every 10 mins.
at about the 50 min mark cut into individual ribs , move to direct on their cut sides and hit with more juice and seasoning. flipping for both sides.
pull off to plate and finish with squeeze of lemons and light sprinkle of seasoning.
the lemon juice makes them surprisingly tender, not on par with low and slow but still a good bite.
tater salad, and pickle pasta salad as sides.
