food SAVE QUESO!

Haha, not 100% sure, got me other dishes done ready to rock, BUT everytime i try to make anything like a cheese sauce as such (Flour and butter) it does not go to plan.

Hmmm will see how it pans out, few more tequilas may help

In honor of the lovely CJ's birthday, I am Saving Queso. You know, I was just going to do it the easy way with some onion, chiles, a can of Rotel, and a block of Velveeta. In fact I have all that, but since it is for a party, I am doing it the right way.

Ingredients:

onion
serranos
habaneros
bhuts
spoonful of fatalii puree
homemade hot Italian sausage
can Rotel tomatoes with green chiles
cumin
chili powder
bottle of Dead Guy Ale (drink half)
cheddar
Monterey jack
mozzarella

Sweat the onion for a couple minutes, then add the meat and brown, add the chiles, and spices. Add the beer, cook a little, add the can of Rotel and begin slowly adding the cheese stirring the whole time. If too thick add a little milk. I did not.
