I was going to make queso tonight but its been cold and rainy and I've been moled up and burrowed in and am feelin' fat'n all so am going with something a little more healthy like little salmon burgers.

uhm...queso fresco is differnt than what we Texans refer to as queso. Nacho cheese sauce would be the closest equivalent outside of teh Lone Star State.
On another note, if'n I had room in my garage for another fridge, I'd add a humidifier to it to make a cheese cave and make my own scheeze. I'd love to make some english style aged cheddars. Those in turn would make some incredible queso.
