smoking scallops magnifico

Take some good sized scallops and slit the side just enough to make a cavity then use your choice of pepper cleaned ( no seeds or membrane ) and slip it into the scallop. I use Habs , then wrap with 1/2 piece of bacon use toothpick ( wet) to hold and grill till bacon is browned , then plate with a cold brew and ENJOY . Jerry T.

Just ribbing you a little. Sounds good though.
 
I make something very similar, but I cut the tops off the habs, clean out the seeds, stuff the scallop in the hab, and wrap that in bacon!! I find this way the bacon gets done and the scallop, being inside the hab, it doesnt get over cooked.

Either way, they are amazing! :dance:
