Thing screams pizza to me ...
 
How can heat escape the lid? ...
A piece of 1/4" steel on some (bolt) legs about 4" above the main griddle ...
 
Fire up the burner to get everything hot AF, throw in some A-Maze-N smokers around the dead space for WFO flavor ...
 
Kill the gas and cook the pizza on residual heat between the two pieces of steel with the lid keeping all of the heat in ...
 
That will totally work ...
 
Don't think it's a tight seal so the heat should push out the sides of the lid. If needed I'll put some kind of vent like the Weber.

Yeah. I think that's a great unit, and I wouldn't compromise it too much in all honesty ...
 
Leave the lid fully intact and it'll keep heat in like a mofo ...
 
I'm going to assume you aren't cooking for a line of people, and as such, you can use the burner just to get a bunch of metal hot, and then kill it for the cook and work off the radiant and stored heat for most everything you are likely to cook ...
 
Looks like a bonafide flat top to me. Just seeing it makes me want all manner of breakfast foods.  :)
