Exactly what Scovie said they were fully wrapped in tortilla as a package for portability and sold off the back of burros. Of course, you can do it however you want as well. Food evolves, unless you're a purist.

Makes much more sense. I love enchiladas. For me they must be corn, I thought it was odd when I first saw flour but I know it is done some places. There's a whole transformation of the tortilla from hot oil to enchilada sauce, then wrapped and baked or broiled with cheese.
 
Trying out a couple of new hot sauces.


First one up is Keenan's killer original hot sauce from Colorado. It reminds of the taco hot sauce that comes in packets from Taco Casa just with a little more citrus flavor from the lime juice and alot more heat. On a heat scale from 1-10 id give this one a 5.

Second one up we have Sauce Piquante orange from France. This one is very similar to Tabasco Hot sauce in heat and flavor with maybe a little more tang.

Omelette looks good! I must admit, a guilty pleasure of mine is canned Corned Beef Hash.

If anyone asks I will deny, deny, deny the shit out of it, but I love the stuff. I can't help it.

When I do tho, I add a Mexican shit-ton of ground (powdered) bay leaves. It makes it more like home made. :rofl:
