food Shrimp Stuffed Rellanos

Roasted (then peeled) a few Poblanos (prefer Anaheims but didn't have any):

Dry-roasted a few shrimp:

Mix of shrimp, Monterey Jack, Fonina, Cheddar, Aji Limon, Serrano, Garlic, fresh sweet corn, Onion, Cilantro.

Fried in egg/cornmeal mixture . . . the pictures don't look so good - the Rellanos tasted great:

Pictures are great, you're too modest. I've got poblanos and want to try it. You "dry roasted" the shrimp. I'm not familiar with that term, can you explain? Looks like I could sauté the shrimp in a little peanut oil. Would that be ok?

No oil. Just put them in a hot skillet (I use a cast Iron). Watch them carefully so they don't get overcooked or stick to the pan.
