hot-sauce Sorry Guys Your Favorite Hot Sauce is Bad!!!

In Marine Corps Boot Camp, our Drill Instructors used to carry around the little 1oz bottles of Tabasco sauce that come in MREs. They'd use them as eye drops on recruits who "needed help" staying awake during classroom instruction time (lights off, slide shows, etc.). Believe me, after you see that happen a couple of times, you'll NEVER fall asleep in class again :rofl:
 
I'm older maybe than a few here (but not over the hill yet) but still old enough to remember when younger, that Tabasco was the "only" hot sauce on the store shelves. As a kid, "Tabasco" was synonymous with "hot sauce." That is to say that when you said "hot sauce" it was assumed to be Tabasco brand. I eat it, have many bottles, but certainly not my favorite.
 
I am currently growing a Cayenne hybrid - developed locally at the Clemson experimental station some years back called the "Charleston Hot." A much hotter version of typical Cayenne. If all lines up right, there might be a new Warrant Man product in the fall. Time (and luck) will tell...
 
I as, THP do enjoy Cayenne.
 
Not sure on the heat level just yet, nor the exact recipe, I've some thoughts but will experiment...
 
"Should" it come to fruition, there will need to be a name.....  cart before the horse, but suggestions welcomed...

Yep, that's kinda what I was getting at. It's the "de facto". And of course, he who does first, does not necessarily do best... :D

Charleston Hot ? Is that pepper the same as the Carolina Cayenne?

I found out about the Carolina Cayenne after I had planted my garden this year [emoji20] It’s sounds like it’s a good one. Next year it’s going in. [emoji16]

My favorite eat with everything sauce currently is Marie Sharp's Fiery Hot Habanero Pepper Sauce (45mg of sodium and no onions version). Super addictive and low vinegar and salt with plenty of flavor.
 
I bought a few bottles not thinking anything about it but later when I went back for more all I see is the gold label version that includes onions and 210mg sodium per serving... WTH? Not that the higher salt one is bad I'm going to try it anyways but love the lower sodium one I'm hooked on now.
 
Is there a new and old version of the Fiery hot Hab sauce?
 
Some of Marie Sharps are reasonable sodium and some are crazy high. The mild smoked one is way lower than the hotter smoked one. IIRC the hotter one (Smokin Marie) is over 400mg.

Looks like Family Dollar has them cheap in 3 packs.
That's the one. 
I bought the three of these at Family Dollar (separately). None of them are bad, but I like the habanero the most.

Also, on the topic of Melinda's, this sauce is my go-to for pretty much anything.

I had a bottle of Melinda's ghost pepper sauce, which I think kinda tastes like somebody farted in my mouth.  Maybe I should try that one.  It's pretty hard to screw up a hab sauce, right? 
 
I got all 3 at Family Dollar today. The are all very tangy. The hab sauce is fairly mild but for some reason i like it. Sodium is high but not horrible. Its very basic, red habs, vinegar, salt, food coloring and xanthan gum. I detect a hint of cayenne in it but its not listed....Pretty good for $1 and way better than Tabasco's hab sauce.
 
I didnt care for the jalapeno. I dont get much from it other than sour and some heat. Tastes pretty much just like one of my hot vinegars and not a whole lot like jalapeno.
 
The cayenne hot sauce though was really good if you like stuff like Crystals. I could smother some wings or cold fried chicken in that.
 
I can find a time and place every hot sauce would be good for except tabasco. Its always taste terrible to me. Growing up as a kid texas pete was my first spicy love. My favorite drink/snack as a kid was Cambells tomato juice loaded with Texas Pete. Now Im not as big a fan of vinegar based hot sauces but its still my go to condiment to finish my tacos

I haven't really found a jalapeno sauce that I've liked. They seem to all fit under the category of "sour and some heat". And I've found both those and the Melinda's sauce have a lot of salt. Definitely not the purest taste, but the best I've found in my limited ventures. 
 
And I actually really liked the hot vinegar I made last year. Just a bunch of small thai-looking peppers (came from an unknown cross) with a couple chunks of orange hab thrown in. It had a nice flavor for peppers steeped in vinegar and seemed to grow in heat for a while. I completely disregarded any safety with it though, so now that the taste has changed I've stopped using it.
 
Ive tried a couple jalapeno sauces that were ok. Actually the Tabasco jalapeno is one of their better sauces. Sofar though nothing ive tried in green jalapeno hot sauce or a verde salsa beats home made.
 
Cholula green pepper hot sauce is ok for a cheap one. Its jalapeno and poblano.
 
HollaPeno is pretty good and fairly low sodium.
 
PexPeppers Taco Fuego is really good for a ripe jalapeno hot sauce. Sodium is very low too....like super low. I would say its the best ive had.
 
I like the hot vinegar i make but it don't taste like jalapeno. I use a mix of whatever i have on hand. Usually green Super Chile mostly with some Serrano, green lemon drops and a little bit of habs. I didn't grow any of those this year other than bonnets. Probably use whatever Sichuan dont ripen, some jalas or Fresno and some Turkish hot peppers.

Still tweaking the recipe.... but I think I've decided on "Suicide" for the name. But I do like that one (Light'em Up)  :cheers:
