food STEAK!!

filet mignon from the sous vide tonight ... testing TJ's filets ... they fail compared to what I'm accustomed to from morton's, but that might actually come down to the literal butchering ...

we slowly caramelized a pair of nice onions over the course of the entire 90 minutes the steaks pasteurized ...





turn up the heat and firm them up (which gives D the chance to turn hers well-done) ...

Well, I have been craving a good steak so I stopped in at the butcher shop. I intended to get a big brontasaurus ribeye like usual, but they had porterhouse on sale for $6.99lb so I got one of them instead. No marinade this time, just my steak rub. No grill this time either, it is raining, and I am out of propane again. Seared on the stove and finished in the oven, then glazed with Heartbreaking Dawn's !841 sauce.

Now come on, you know when you cook a steak that big you finish it in the oven. You work in a restaurant don't you?
