food STEAK!!

Someone just started a rice thread.
 
Sure ,I am in if you want to talk Risotto on the rice thread.  Just a warning though, just about every Risotto thread I have seen on other forums gets every bit as rowdy as Authentic BBQ or Chili type threads.   If we are lucky hopefully Eseggi would jump in, I think  he is from near where my  Dad's family came from.

Looks like it could be reverse sear as well.
 
There's no reason to post my steak tonight ...
 
In fact, I think I'll just #grillbot it and save myself the cold and rainy experience following that looker from FB ...

Thanks for the kind words folks. Steak was great. I don't usually eat fillet, but the gf loves it and brought home a couple of nice pieces from pineland farms so what the hell. Steak was seared in my new mauviel copper skillet, then into a 400F oven for 6 minutes.

As for the pan, I didn't end up w/ one (ended up w/ a larger All Clad for Danielle because she said she fights to keep the taco meat inside the frying pan), but I seem to recall spending half and evening poking around eGullet trying to see if folks preferred the SS or CI handle for one while I was pre-gaming Christmas shopping ...
 
So, I have to ask - CI or SS handle? =)

Thanks. I've always wanted a copper frypan/skillet so when I upgraded the kitchen a few weeks ago with all new allclad I broke down and bought the mauviel 10.25" copper skillet with solid brass handle. I almost got the CI handle but with a discount code I was able to pick up the brass handle version for $150 with free shipping, which imo is a steal.  damn thing is sexy as hell and transfers heat like nothing else i've cooked with. 
 
Yes, they are very practical and not as flimsy as the cheap aluminium teflon coated stuff. It also has decent DuPont teflon coating instead of chinese crap, so they last a lot longer. Your site mentions it's from stainless, but it's just aluminium.. but a lot heavier than a cheap teflon wok.
 
It really helps when you are as chaotic as me in the kitchen, I usually overstack the pan with food but with this one you can still turn the stuff without spilling it all over your furnace..

I love/hate this pan ...

I use it A LOT ... and it won't get shitty so I can replace it ...
