we had 5 at one time and I learned I'm not a got guy,lol. The bastards would eat my clothes when I was trying to work and constantly be tearing and testing fencing. My neighbor that is about a mile behind me across the pond has thirty or so of the Tennessee fainters and a few boar goats. When they go out of town I'll go tend to them and I get all the goat fix I can handle. Little bastards. Dts that is one awesome plate of food.

Here is a couple of NY strips. I cold smoked them with mesquite for two hours, followed up by a hot and fast sear!

Cold smoked, cool. The grilling/sear definitely cooked it, no way it cold smoked in 2 hours and was cooked. Nice process I dig. Basically cold smoke for flavor and then grill but a little less time than normal. Right?

Yes, after cold smoking I get my grill up to 600* and sear each side for about 2-3 minutes. Comes out perfect for us every time
