We have banned choice and select now...our Costco carries 10 different PRIME cuts :)
Makes sense then. You're spoiled :).

I know where I'm headed tommorow. We shop at Costco about once a month, for some reason I've never really taken a close look at their meat. Shame on me.

I can't tell who's being sarcastic about steak cuts.

: shrug :

You kidding me? That pic not good?!!!

Hella juicy, shows off the meat, shallow depth of field, that's one of the best pics you've ever taken!

That pic is money no sarcasm.

Wait. Is it suspended in air???? This pic just got better!

Can i put Prime Rib up in hurr?

You know bettern' most that many cuts are pretty much junk.

Flatiron, sirloin strip, petite sirloin, et.al. are in that category.

Most meat cutters will tell you the same.

Most often its Select or even worse, Utility grade.

Not even sure if Utility is even a grade anymore.

Good luck chewing on it.

And then there's tri-tip.

More marketing crap.

Better ground than a steak so how good is that?

I am usually down with the TB wisdom, but I really like   tri-tip steak .  I was eating it well before I even knew it was tri-tip.  The place I got it from cut it  into these ugly rectangular strips and sold it as  bottom sirloin steak tails.

I will make any cut of meat taste good, but I rarely make 'steak' out of anything other than a nicely marbled ribeye or strip (or filet if someone wants to play at being fancy).  Don't care for tbones - always felt they were rather bad examples of their parts.  Love nearly all cuts of beef though, tri tip and flatiron included.  I just don't make the classic 'season and sear, plate the steak' type dishes with em.  Made beef rendang w Tri Tip following Buddy's post about it and it was damn fine delicious.

tri-tip from a reputable source, that sells it whole, is beautiful ... i smoked one a few months ago, and it was 4.5 lbs (huge) and top notch ...

handled it like a standing rib roast, took the center to 128F (I go three over for medium-rare, not rare) ...

now, at the grocery store, they label some shit tri-tip too ... that shit's tough and nasty ... and it usually comes in 3x pieces ...
