First good sign, after 5 minutes I got a terrific sear...
Both sides seared, put them on a cooler burner to reach 140 degrees, about 6 minutes/side.
This is how they turned out, and beef flavored M&M doesn't come close to how good this was!!
I have a whole tenderloin in the freezer I was going to smoke, but these were just too good. Decisions, decisions..........
