Scove's Indoor, Oven Ribs 103

I ain't drunk yet.
I just wanted to clear that up.
But I weeeeeiillll be later... Believe.

So here is my "How to", "Oven Ribs for Dummies" (duh, look who's writing this).

Step 1. Get some Baby Back Short ribs, Wash them to get all the gunk and bone dust off.

On the under side (concave) there is a tough membrane that needs to come off.
Start at on end and start peeling, put some muscle into it. It's hard to get started but then becomes easy.
Just do it.

Step B. Be generous with the Rub. Mine in this post is kind of a hodgepodge of leftover rubs including JayT's.
Basically, Salt, Cumin, Pepper Powder, Mesquite, Cumin, Garlic Powder, White Powder (Geeme friendly).
Pour on the ribs on all sides, covering generously... think "Sandy Beach", then add more.
Let air dry for a few minutes and soak in.

On a full sheet, arrange some rackage. Whatever you have to do to keep the ribs up off the pan about 1/2"
Cooling racks work well.
After the racks are arranged in the pan, pour TWO BEERS into THE PAN.
I suppose you could use Juice, but don't post it here.

After resting the Ribs on the racks, over the beer, in the rub, without it's skin, after a shower,
Tent it loosely tight. hahahahahaha You want it sealed TIGHTLY, but NOT touching the meat.
If it does touch the meat, everyone will die.

Set in a Pre-Heated oven at 225ยบ. Set the timer for 6 hours and just walk away.
Now pour some hhwiskey, open a bag of chips, and later, make some sauce, Corn on the Cob, and BBQ Beans.

I don't know if I'm a player tonight ... I'll be drankin' and we've got some company coming over for a couple of hours, so I think it'll be a latenight round of brats on the indoor grill to keep things safe and also, it's 94F ... FML!

But over the weekend - pre-storm - it's f**kin' ON like D-Kong ...
 
Lez talk Sauoce...

2 C. Ketchup
1/2 C. Apple Cider Vinegar
1/2 C. Water
2 Ts Yellow Mustard
2 Ts Local Honey
5 Garlic Cloves
1/4 White Onion
1 Ts Worschiestschire Sauce
2 Ts Brown Sugar
15 Pickled Jalapeño Wheels
1 fresh Red Caribbean from JUSTAGUY

Get some oil in the pan HOT, you know how... use the HOT dial on the stove
Put the Garlic and Onion in there just long enough for them to get HOT and HAPPY

whoosh flavor them up with Worschtershcire sauce

Add the Ketchup, Water, Vinegar, Honey, Mustard, and Jalapeño wheels, and let simmer for a few

After about 5 minutes, add the Fresh Red Caribbean from JUSTAGUY

Motor boat that shit, and let simmer for another 10 minutes.
Now this is when you bring it to reality....
Slowly add Brown Sugar 1 tsp at a time and whisk... taste.... repeat until it's just right
After you get the flavor and heat where you want it....
Blenderize the shit out of it... like so...

The Ribs have another 35 minutes until we burn'm under the Broiler, so store the sauciness...

No plating pics. Looks like Potter's Crown finally won the battle that waged all night. From what I saw there Scovie, looks like you truly are an oven rib master. PepperFreak would be proud.

Thought you were doing overn ribs this weekend, too, FD. Hm. Maybe I'll have to go to the stoh mysef.

Do you know where I live? About half-way between miami proper and the upper keys.
(RIGHT where that nasty little yellow cone is pointing)

Oven BBQ might have to wait a while.
I MIGHT be able to squeak some in today, but to properly barbeque ribs in the oven, it takes time.
