I didn't have the stuff to make Hurricanes dammit. Work with me here!
 
Just a little more, as cooking will ensue latah. First pulverized a bunch o' crystallized ginger.

Then threw in the bourbon-rehydrated pepper pods along with the bourbon, lime juice, the maybe a tablespoon of dry rub that was left from last night, soy sauce, garlic, onion, and.... um.... coriander, paprika, maybe tarragon. Sorry, I got a bit carried away focusing on the spice cabinet and what to add vs. what not to add...

It's a pretty tasty mix - can't wait to see what happens when it combines with the dry rub that's already on the ribs.
 
Rainy day here in due to Isaac moving through. Been drinkin all sunday. Went to the flea market to pick up some hot sauces, came home and had a brilliant Idea to make some red beans! Then had remember TB telling me how to make queso, so queso with beans it was! Brilliant. Beer all day. Rainy sunday. Queso fatness so good.

I am by no means a good chef, nor do I really know what I'm doing, so critisim welcome. THe queso came out a little runny, due to bean juice. But all is good in the hood. Was delicious. Got a ton of left overs.

After that goes in the organic canned diced tomato and red beans. Why organic? I say why not.

Time to add z seasonings. Oh and in case why veggie stock, and no pork deliciousness, you wonder, well that my friends, that is because my girlfriend is a vegeterian and these are the sacrifices I must make if I desire to share.

Cheese is the future.
Made up the queso, but added some chopped up Jalapenos, and finely diced chopped onion sooo good. And this is where I should not have done what I done. But I done what I had done. I added the beanness to the mix. It made the queso watered down and runny... However the flavor was nuts! It was sooo good.

I was drunk and excited, so I didn't take any pics of the final product being scooped up with corn torilla chips and mucho hot sauce. Because I'm a fool and forgot.

I'll take pics of the left overs er something. There is a ton left over. Hot damn.

Hmmm. Interesting combo there. Bean queso dip. I'd give it a go. You asked for tips/criticism, here's one for thickening your queso, start with a roux. A 50/50 mix of oil or butter and flour stirred together before adding your veggie stock.
 
For the queso I actually did do a roux.. .or at least my attempt at a roux. I used like 1/3 stick of butter, 1 1/2ish tbs of flour and stirred for 5 minutes or so before adding cream, japs, and onion. Then added small handfuls at a time of monterey jack and cheddar cheese to the mix. Flavor was right on I think. Little zip to it, and creamy.

Looks good dude ... and I totally understand working w/in the narrow confines of a partner's palette ... Danielle doesn't like vinegar or mayo ... it rules out essentially every condiment save mustard ... that's why sometimes you'll see early morning or very late night stuff here from me, i'm often fendin for myself on those ...

I'm sure there's a work around for meat ... I've had some tasty, delicious veggie stuff from life-longers ...

I don't agree that cheese is the future, though ... I think it's lab cultured meat ...

I'm a huge fan of a little corn starch in cold water for thickening ... you add it slowly and never stop stirring ... works a charm ...

This storm has been nothing but a let down. All I wanted was conditions to be bad enough to have to close the office, but ok enough that no damage is done. Looks like I'll be going to work as usual tomorrow :neutral:
 
According to Fitty, Sum bitched out and went home to board up his collection of silly bands. Fun was had by all for a bit.
 
Cookin hasn't stopped. The lady is getting this ready. Peanut butter banana bars... Oh and she served me a dirty martooni, which I mostly have drank....

Just to clarify, I did NOT!!!! use the word "bitched" out.
Sum was over last night for a chicken-leg cookout, debauchery and laughter ensued.
We didn't end up having a hurricane throwdown because, frankly, this wasn't a hurricane.

It wasn't really much of ANYTHING. I didn't even have to board up the house.

Here's my take on it.
I applaud, for once in my life, the efforts of our city and county management.
They did their due diligence and used the best data they had, and made decisions to keep everyone safe.
And then the storm was a dud.
Not their fault.
If it shifted east instead of west, we would have been sodomized. Better safe than sorry.

We got some rain, and a few good wind gusts, but everything is over now. We kept power and stuff.
Now we have hurricane supplies in case something else comes our way.
I hope JT's magical jambalaya keeps this thing away from the good folks of Nawlins. They don't need any more shit.

G, that sauce looks great. You gonna put that on some Oven-Q? Those flavors will be divine on some ribbies.
Probably be able to re-create that grill taste that makes slow and low ribs so awesome!

I, myself, am not well versed in queso. Yea, I've made it a time or two, but I'm not proficient at it yet.
But I will be. Maybe a new years resolution.

Thank you all for the well wishes. We have had fun with this. Looking at it as a dry run.
We got a shit ton of liquor, and now we have the day off tomorrow. Bonus.
