King crab & queso stuffed mushrooms.
 
mrs. blues is a freak for king crab and she suggested this over our traditional tamales for the Christmas holiday. 
 

 
Simple really. Pick the crab and toss into a bowl. Add some Mae Ploy Thai Sweet Chile Sauce and your favorite queso (homemade is best and I had some leftover). I pre-baked some mushroom caps for about 10 minutes at 400f, let 'em cool and then stuffed with the crab queso mix and topped with bread crumbs. Then back into the oven and baked for about 7 minutes and then kick on the broiler for the last 2 minutes.

I woulda' had another pic or 2 but mrs. blues grabbed 'em up when I wasn't looking.

Oh geesh, TB. If you have this strange feeling when you're sitting at the computer that someone's trying to come right through it, it's probably me! I picked up some lobster tails and am looking forward to eating those, but now I want some king crab and stuffed mushrooms, too.

Have mercy indeed.  I would Chairman Mao those babies all the way to Shinola, then if there were any left I would put that Chingon sheeit in my pocket and save them for later.  Chingaderra X 10

mrs. blues wants cast iron al pastor today and I have porkage marinatin' for that right now.

I got my hippy lovah' on last night with one of my bestest favoritestess foods.
 
Salmon cakes.
 
Pink salmon, rolled oats, cilantro, green onion, fresno chile, garlic powder, cracked black pepper, kosher salt and 1 egg.
 

 
Browned in Black Betty using only a few drops of canola oil. Why? Because Betty has become so well seasoned she only needs but a few drops of oil and she's virtually non-stick. I made half a dozen cakes but took this shot as to highlight the pan. I reckon after another 6 months to a year, the surface will be like a black mirror. The ultimate in cast iron.
 

 
Broke up a cake, and tho'd down on a toasted corn tore tillah with shredded cabbage and squeezin's n' pleazin's of fresh lime. They needed nada mas.

I use teh paper plates because they can be recycled and water for washing is an expensive commodity in Texas.
 
Just tryin' to do my part for the 'vironment n' sheeit.
