I suspected it was calamari and some other fish as well.
 
I love little one pot seafoody dishes.
 
For that one in particular I probably wouldn't pair it with a white wine.
 
That kind of comfort food begs for something heavier like a sangiovese or even a nebbiolo.

Nah, i've just confirmed that with a barbera... White wine needed here... With seafood is difficult to combine red wine...
Btw for codfish you could think that: in my city we have a local recipe, maybe you know it, called "baccalà alla vicentina", baccalà is salted codfish more or less... With that a red wine should be good, red tocai from Barbarano is suggested...

Last time I was in Mexico I had a tuna dish almost exactly like that but without the fennel and very heavy on the garlic.

The falafel 'thang was dern' good but needs improvement.
 
I have some of the mix stuff to use up first but after that it'll be all scratch made, including the flatbread.
