Swordfish will actually vary in color depending on what the fish has been feeding on. Up here in Maine we call this "pumpkin" sword fish, which means it's been feeding heavy on shrimp. Wicked goodJoynersHotPeppers said:

Then topped with crushed ritz mixed with melted butter,s/p,fresh lemon juice,fresh parsley and just a tiny splash of sherry
then under the broiler until med-rare
