Grant based on what you have said I think you will rather like Halibut. Someplace here I posted some jerked halibut fish tacos that were killah. Everyone's taste is different, personally I like most everything that swims in the sea.  Stay away from fish that has a lot of the dark blood line, usually your stronger fish will have this like bluefish and you should be good to go.

I'm assuming by dark blood line you are referencing something along the lines of what I've noted in swordfish fillet (literal vascular system) ... or are you referring to the flesh's tone (salmon)? ...

Looks good, a tad well done for me, but I like mine stoopid rare.  What kind of dressing?  I need some tuna.  I stole a dish from a local restaurant.  I will get some seaweed and tuna and post it here.

I ended up going with a simple ranch and kept it off the fish. I find my go to balsamic changes the dish for me. I either eat my fish raw, seared or like this most of the time and will cook it until just done if making tuna salad. 
 
For whatever reason when I think rare tuna, and salad, I think Asian flavors.  I make a dressing with rice wine vinegar, sesame oil, lime juice, garlic, ginger, and a little agave nectar that is perfect on a salad like that.

Yes, I too do that as well especially if I do sesame crusted CI seared tuna! I was lazy this night since I had already cooked one round of dinner and tuna for the kids :) 
 
I was told trout but not by the actual fisherman.  I can believe it is char, I think what they call brook trout out there  is actually char. 
 
I don't know where to drop this, really, so I'm going to lay it down right 'hurr ...

I got my LDHS order today, including the new Chipotle one ...

I thought Pescatarian meant everything up to fish ... but then, again, I guess that's *MY* own biases or projection that cheese would be OK for pescatarianism ... is it out because of the dairy component? ...

I think even they are lost judging by the following reply. You didnt have any fish so it falls into the ovo-lacto category cuz cheese and I guess you have to have fish with every meal to be pescatarian? Unless I missed some other meat you added.
 
This is part of the problem when they run around saying "we're vegetarians who eat fish" when theyre really just picky carnivores who also eat plants.
