Got a nice piece of steelhead.
 

 
A little Lawry's seasoning salt and lime squeezin's and some Black Betty mojo.
 

 
Chiltepin tartar sauce and red boston lettuce on a comal'd corn tore tillah'.
 
A simple fish taco.
 

 
Squeezed on a bit more lime and that's it. Simple good food. Simply done.
 

 
Love my salmon but steelhead is on a whole differnt' level. Not as rich tasting as salmon and when fresh it has a buttery quality to it.

Well done sir. Made a purchase today that I know you will like. Time to find some masa cause this guy bought a tortilla press! Can't wait to try it out.

Me? I like bacon and beer way too much to give it up completely......but this deployment has taught me that I CAN live without it for long stretches at a time.
 
Honestly.....If someone told me that I could have all the shrimp I could eat in exchange for the French fries and cheese sticks......

Husker ~ a cast iron press is a 'thang of beauty. I often make my own when I have lots of time but alas, still eat a lot of store bought corn when I'm feeling most lazy.
 
Pauly ~ Thanks to your deployment, America has plenty of bacon. After you get home, I predict supplies of pork bellies will dwindle rapidly! In the meantime, enjoy all the shrimp and lobster they'll feed ya' compadre!

First off, your molcajete looks badass!
 
Second, I'm rather envious that you have access to baby octopus and the like. Here in north Texas I can think of only 3 or 4 joints that possibly carry it and all are over an hour's drive  away. Sucks to be me sometimes.
 
That's a dang guud luukin' dish and reckon it deserves a big chingon!

Molcajete is just fun to say. Lol. Mine is shaped like a pig. Carried the thing back from Arizona as a carry on item.

TB im suprised to hear that about your part of the world..... your prawns do looks daaaamn tasty..... thought you were a coastie yourself. We have a young Texan lad who started at work recently, the other day he was telling me about the abundence of mama & papa style Mexican food in your good state. Had me thumping the table in envy he did...... certainly cant get that fine grub over here...

Sadly I its a solid 8 hour road trip to the gulf coast from where I'm at. Still, while we get pretty seafood here, the specialty stuff like octopus is rarely found outside of high end specialty markets or Asian markets. The Asian joints close by, while great for sauces and hard to find items, well, lets just say that while they have the selection, none of the seafood looks like anything you'd want to purchase. Questionable origins and lack of consistent fresh quality n' all.
 
As per the Mexican joints, authentic Mexican cuisine is difficult to find. Most of our so called "Mexican" joints are a bastardized American version known as Tex-Mex. If you walk into a joint that describes itself as being authentic and they are using yellow colored cheese of any kind, rest assured that it is Tex-Mex. True Mexican is relatively low fat whereas Tex-Mex is heavy on yellow cheese, refried beans and sour cream, not to mention in Texas joints they use primarily white flour tortillas rather than corn. 99% of Texans have never had authentic Mexican food. Sadly, most Americans in general still think of "Mexican" as Taco Bell and Chipotle.
 
The last few years there has been much ado and fear mongering over the Tiger Prawn being invasive to Gulf of Mexico waters. Years ago in Alaska we use to get 'em all the time in stores. Huge prawns and very tasty. Dang if I can find 'em here in Texas.
 
That species is heavily farmed in SE Asia now but I also understand its native to Aussie waters. I recall the Aussie tv commercials with Paul Hogan and his "shrimp on the barbie" catch phrase. If I'm not mistaken those huge prawns were tigers.
 
If you have access to some of those, oh man, please post up a dish featuring those bad boys por favor.
 
Go to Houston, TB. Telephone Road area especially. You are just a tad too far north. I never had a flour tortilla until..... well, can't remember. Still don't really like them, so never get anything made with them. I was shocked the first time I went to a place and they served enchiladas made with flour tortillas - - - wtf??? That said, Mexican food is soooooo much more than "border food". Admittedly, though, when I do go back to Houston now, I find more and more TexMex places. I have absolutely nothing against it, as I love good TexMex, but it is its own classification separate from Mexican.

Last night and tonight I got over on my burger fix. (See the Burgers Hell Yeah! thread if you haven't already)
 
Tomorrow until at least the new year I am back to my pescetarian ways.
 
But now here you are tempting me (as all women do) with hitting up authentic Mexican joints.
 
When I think real deal Mexican I imagine al pastor fresh carved off the spit at a stand in Mexico city, carne guisada, carnitas, and asada. 
 
And the mere mention of Houston and Tex-Mex I'm thinkin' Original Ninfa's and sizzlin' fajita's, botana's, and machaca.
 
And don't even get me started on queso loaded up with chorizo! Ask Jay, he'll tell you, there just ain't no kryptonite for that sheeit.
 
Life is hard but dammit girl, why you got to complificate it all up in my noggin' n' sheeit!

Chipotle crema is pretty damn guud but a crema/sour cream blend with fresh lime juice and lime zest will change your life.
 
I gotta' do a veggie "cleans" the next couple days and then I'll posty up some chingon fish tacos!

I make a tortilla encrusted mahi or grouper taco...same idea with the crema/lime zest with a splash of Anejo to smooth and soothe. Next time I make'em ...click,click

Shrimp stuffed avocado.
 
Just a simple shrimp salad with bay shrimps, onion, tomato, pickled jalapeno, cilantro, black pepper, kosher salt, olive oil mayo, and fresh squeezin's n' pleazin's of lime.
 
Supah' bueno!
 

 
Yesterday I had a taste of mrs. blues holiday honey baked ham.
 
Reminded me of dead skunk in the middle of the road.

Started with some garlic, cilantro and chiltepins.
 

 
Ground that up nice and feelin' alright with some Alaskan Summer Kolsch style.
 

 
Tossed in 2 avocado's and squeezin' n' pleazin' of half a lime and sea salt.
 

 
Gooder than hell!
 

 
Ratholed most of the guac for later use and then got my tater tot on.

Shredded jack n' cheddar scheeze, diced onion and pickled xalapa's.
