what kind of flavor comes off that star anise...I have always stayed away from it with most saying licorice.
 
What kind of meat will you be using.

No meat, mushroom 
 
SA is very subtle in the overall soup and is an ingredient in most all of the recipes, alone yes very licorice which I hate!

to me it's really strong and personally don't like it
 
I wouldn't be able to eat the pho with two whole pods in the broth
 
I actually take one star anise pod and break off a couple arms and that's more then enough for me
 
But everyone's taste is different.

I won't have two in the broth, just toasting them now and allow some of the flavors to carry over. ;)
