My wife makes a lot of different soups through the winter months. This year she has been making some extra large batches to bring over my Mom, who lives on her own but has some dietary restrictions. The version for my mom was non spicy, gluten free,low sodium.
My wife calls this minestrone, but it is far different from any minestrone I grew up eating. Whatever it is called it is tasty and packed with a metric shite tonne of veggies.

Home made Fife Noodle Miso Soup.

Colorado pork green chile. If you've never had it get to the googler and find you a recipe. We make ours with home grown green chiles, pork shoulder, onion, garlic and hominy.
It was not that long ago chile verde made be cringe. Did not care for it at all. Now its one of my favorites. My dad went nuts over the last batch i made.
Did the onion soup thing over the weekend. Chuck roast and onions, garlic, and double-decker grilled cheese on top, oven roasted. Yummy but lacking on the pepper heat side, until you add to taste.

Yes. Chicken bones, fresh ginger, onion, carrot, galangal root and a touch of fish sauce.

Had a craving for Tomato soup.
Tomato, fried onions, garlic, ginger blitzed. Raisin bun on the side with Paneer cubes in the mix (home made).
