My wife makes a lot of different soups through the winter months. This year she has been making some extra large batches to bring over my Mom, who lives on her own but has some dietary restrictions. The version for my mom was non spicy, gluten free,low sodium.

My wife calls this minestrone, but it is far different from any minestrone I grew up eating. Whatever it is called it is tasty and packed with a metric shite tonne of veggies.
