Tomato based sauces

How about tomato sauces?!

I've made a few using canned tomatoes, habaneros, vinegar, raw garlic, and fresh herbs and they all came out good. But none on market?!!  :shh:  Does it become "salsa" when you add tomatoes or it is a missing category?

PS not talking ketchup! the texture is thicker, no sugar added, minimal salt & vinegar.

Thank you.

Theres tomato in alot of hot sauce. If I'm understanding the question correct, salsa is usually uncooked and hot sauce is (to put it simply i guess). It really comes down to preparation. Hot sauce is also usually made in such a way that extends its shelf life and fresh salsa is usually quickly perishable. I guess this isn't true in all cases but you get what I'm saying.

I've had it a few times and what I picture it best on is steak tacos, will go perfectly with seared beef and the tomato base makes it a great taco condiment. That and burgers, grilled chix sammie, BLT.

I really like the tomato base sauces with Mexican food. I've tried secret aardvark before but only at hot sauce expos so I haven't really had the chance to play around with it.
