Unripe peppers OK for sauces??

I've seen a few sauces now where the ingredients include geen fruitpeppers. Is this normal? I thought the fruit really gains flavour as it matures...?
 
I'll definitely stick to the 'longevity displaying' green chilis, and yes, NJA, those loose motions are universal, but as you say are almost a Rite of Passage!

Salsalady, our scones are sweet and we don't have the unsweetened ones, but what we call biscuits are your crackers, and are either sweet or savoury. Easy! ;)
