Threw in some Kingsford briquets, a couple of fists of hickory, and twice the amount of applewood chips as yesterday ...
 
I was going to rock out the Weber today, but I need to get some hornet/wasp killer, OMG ... some assholes took up shop in the past couple of week - in a big way ...

Would love to see you make it you're gonna have plenty of authentic pork to work with... at the take-outs they "BBQ" the char siu in the salamander and use the rib tips for the fried rice.
 
I love the char on the onions and peas... onions especially, the wok needs to be super hot... I think charred ingredients first , whatever you want with a little char, rice at end, so fluffy.

But never made it....
