I like the base heat and flavor they provide for sauces and when I want to kick the heat up I just some super hots when I cook the sauce. I am not growing them this year for two reasons; first they are small, I can grow different varieties of cayenne that have bigger pods, therefore will lead to more sauce or dried flake. Secondly, I am trying a couple a couple of new cayenne varieties. I would give them a shot, you will like them.
