Just scarfed this down. Its about 9-10oz of Honson dry lo mein noodles, ground pork with a seasoning very similar to dan dan noodles and homemade kimchi. Topped off with Lao Gan Ma hot oil. This is some damn good tasting hot oil. The pieces of super crispy fried peanuts are just killer. Needed more kimchi imo but i was trying to keep it from getting too sour.

Time and temperature, it ain't hard man.  I have friends devoted to sous vide.  Their results are compelling.  Yet my belief remains that proper fire control and technique wins the day.
