I just used some green Sport Peppers in some Giardiniera.This is brined.
I like green and ripe pickled.Black unripe didn't take to well pickled...
Green and ripe in salsa.Green is best for rellanos,but red works if you catch 'em early enough.I like green dried New Mex.,but they can't take our summer heat so thats a fall treat here.I do like elyukitan(sp)green Habanero hot sauce,but I can't bring myself to harvest green habs,so all my sauces are red,yellow,or peach,or chocolate.
