Pineapple is my new favorite fruit with heat. I have made many spicy mango sauces for a certain dish, but nothing to bottle.
Habs, fresh garlic, salt, and olive oil make a great sauce for fish.
Similar ingredients would work in a sauce.
Mangos are sweeter than apples, so you can't expect apple sauce sweet levels unless you dilute the mangos down considerably.

We have a Medium heat mango, paw paw and habanero which is very populiar or the Inferno which has a good habanero burn but it has Pineapple in it as well, and is less defined mango flavour.
