Wild Game or Fish

If this exists the super search feature failed to direct me...
 
I would love everyone to post plates of food from something they caught or killed hunting.
 
 
First up....ugly plate but a southern classic, fried venison and onions...I like to put pepper powder in the breading.

True that,  I'm also not into the 500m+  stuff. Wildboar is 10-30 yards on a running target driven by dogs or from a seat 25-100 yards..  Offcourse it can happen that it's not a clean shot, but I prefer a (fast) bolt action or a semi so that you can put the finishing shot directly.
 
They also have special rifles for going after wounded boar (we have wild versions, not the wildered domestic boar kind) with actual tusks.

This is a particularly large one weighing in at 320kg (ps that's NOT me). With boars like that we don't need deer. 320kg = ~710 lb
 
And one thing is for sure, you can't outrun those mofos when they are pissed..

Very nice! The most important thing for me is to make sure I have a clean shot, relax, breathe and squeeze the trigger. I love to hunt and take nature very serious an d have the utmost respect for it. I'll start putting out train cams and stuff in 3 weeks getting ready for the next season in Oct. 
 
Rainbow Trout - Eildon, Vic. This one my son caught went 50cm, and I upped his by 1.5cm later in the day. It was caught 10 minutes into our camping trip and made my son's day. All on a $2 ebay lure none the less........

This one was in the freezer waiting to be smoked. Dad did the smoke, hot smoke using Red gum and brought it over today for lunch.

Hmmmm....which way am I gonna go tonight.  Getting burnt on stir fry, Thai, Indian, Cajun, soy, rice....maybe some blackend cardamon/fengreek/fennel/corriander type.  Had my heart set on garlic herb potatoes.  Just can't get the meat right.  
 
 
K...onions, garlic and CI it is.  Back to the meat.  Sticking with the original plan more to experiment with some fenu and others.
 
Horseradish mustard coating

 
The rub.  Grinded Fenugreek, Corriander, Fennel Seed and black pepper.  Added Cardamon, red pepper and cumin powder.  Needed a little salt and brown sugar.  After tasting the rub I added some fresh ground Cinnamon which yelled at me to add. 

 
Smoking low for an hour or so while I fry up the taters.
 
Lol extinct? They are very common in all west and Central european countries, they are even overpopulating as they barely have natural enemies. They reproduceren like.. boars.

That photo is a typical hunting photo, sit 1 yard behind the thing and it looks bigger. It's still huge though.

They tend to plow up farm fields and back yards around here. And once a month they end up in the grill of someones car. We simply have too many.
