food Wild Game or Fish

Black Crappie fried in butter for four minutes and thirty seconds a side. This was cooked perfectly.
 
Not sweet like the Catfish I recently reviewed,, but nonetheless a delicious fish with a deep complex flavor.  I ate it with a Pumpkinseed Sunfish cooked next to it and the "Sunny" was much more plain tasting.

I've eaten a lot of fried crappie with skin on (scaled of course). It's good, but I prefer it without the skin.
 
Unless cooking whole fish... like red snapper on the grill stuffed with lemons and herbs...
 
Also some lobster and melted smoked gouda. Then some hogfish in a white wine leek butter caper sauce. Also some ceviche, really good with heart of palm.

lol i wanted to show off my fried soft shelled crab, but apparently i ran out of space to post pictures here, and now photo bucket wants you to pay to post pictures elsewhere? Are there any free websites to bypass this and post pictures?
