I am going soon going get a 300-400 gallon propane tank to make a smoker out of and had a few questions aboout my plans and hoped some people could help. I plan to use a 50-100 gallon propane tank cut in half to make 2 fire boxes for the grill. My question is on smoke stack placement and size. The grill would be mounted long ways on to a trailer and fire boxes would be about located about 1/3 up from bottom of the sides of the grill.
I belive (correct me if wrong) In this situation of having two fire boxes that having one stack located in the center would be best, and to have it flush mounted with top of the grill, located at the top of the grill, and larger at the bottom than the top would best right? or would it draw to much heat and draw all the smoke out? My plan is to hopefully be able to seperatly control the temps of each half of the smoker. Would this work?? I how do I know what diameter of pipe to use at the top and bottom of the stack? I was thiking about 11" going down to 7" would this be right for size of smoker and fire boxes? any comments on this plan, ways you think i can improve this plan. or additionaal plans would be appreacted.
