I made boston pork and chipotle sausages.

Sausages:

2 kg pork shoulder (skin removed)
3 cloves garlic
200 grams fresh bread crumbs
3 tablespoons fresh oregano
3 tablespoons fresh thyme
1 tablespoon ground sage
1 tablespoon whole corriander seeds
1 tablespoon whole fennel seeds
5 re hydrated chipotle chills
1 heaped tablespoon of Fatalii powder
250ml of the water used to rehydrate the chipotles....

IMG_1017.jpg

After the sausages were mostly cooked I started on the rest of the meal.

I used ERDINGER Oktoberfest Wheat beer for the meal.

IMG_1014.jpg

Poured it in the fry pan with 2 red onions, 4 chopped tomatoes, 1 pack of tomato paste, 2 red sweet peppers, 1 green sweet pepper, 2 cloves of garlic, hot paprika, Cayenne powder and basil leaves......

I let the mixture simmer down for 20 minutes then added the sausages for another 30 minutes.

I served it all over rice and it was so so good......

The finished product.......

Pip's red hot Chipotle Oktoberfest sausages

It went down with a Weihenstephaner Tradition Bayrisch Dunkel....

these sausages were really hot and full of flavour.

Hope you like the pics....:)

Frydad's Oktoberfest Sausage Blow

Since I don't have a sausage stuffer, I decided to load my casings with something with a little more firepower. So, I cleaned up my old potato gun (made from leftover parts from my even older potato gun). Sausage is made from pork, saurkraut, habanero, HB Oktoberfest beer (not in pic), a splash of busch light.

Packed it in as tight as I could

Rolled on the casing using a technique I learned in college.

Slapped a little over-proof in the combustion chamber, and SHAZAAM!!!! Click the link for a quick 20-second demonstration of my sausage-stuffing prowess!! Had to put it on Youtube. Wouldn't let me embed it here. Enjoy.
Disqualify me if you must, but please leave this up for people to enjoy! I'll bet nobody's ever stuffed sausage like this! For some dumb reason I thought it would work.

Where's POTAWIE, chilliman, and the gang that was all excited about this?

I'm just recuperating from last night:) I didn't take any pics of the grinding, mixing, stuffing etc. but I will get some pics up soon. Some of my sausage are still in the smoker, and I have some beirwurst which I still have to simmer. I should have everything completed by lunch time (in around 4 hours) or possibly supper time.

Fun stuff so far. :D

I wasn't able to round up much for ingredients, and I've got nothing to grind/stuff with...BUT..I have an idea that just might work.

You all are making some great stuff. Looks fun and I really wish I had a grinder and stuffer. I can see that the vote is going to be tough on this one.
