    food-safety Sanitizing plastic caps

I just use the hot fill method. With a ridiculously low pH and a temp at 185 and above, I have had no problems. With the inversion, I was told by my process authority that just a few seconds is enough to kill nasties. Five minutes might have a tendency to cake up the opening. For lab samples, I...

review Official Review: Red Hawk Premium Peppers Scorpion Sting Extreme

Great review as usual JayT.   RedTail I am impressed with the choice of ingredients, the color and the consistency. It just looks and sounds fantastic. I made a sweet peach sauce once with fatailis and cinnamon, that I liked. But strawberries and vanilla and morugas sounds better, much better. ...

    Air bubbles in sauce?

If you are bottling right out of the blender/juicer then there will be bubbles. But if you cook (and hot filling is generally recommended) it after blending then this seems to release the bubbles from the ride in the blender.

marketing Best way to store/ship/organize T-shirts for market?

My screen printers pretty much made me get those bags, The 9"x12", 1.5 mil resealable plastic bags from ULINE are the ones they use. They cost like $18 and you can even get a t-shirt folding template for another $15. I keep a plastic box of bagged and stacked t-shirts in my truck now and have...

    Scaling a recipe....

Dyce51,   In addition to the salt SL mentioned, there are quite a few other ingredients that do not scale up directly. For me, I use orange zest. Aromatics like zest need to be scaled up with a very light hand. I have ultimately found that I have a tendency to reduce the proportion of vinegar...

    Inventory, invoicing, and billing

Thanks salsalady.   I like a good rant(though a mild and respectable one by my standards) and the reasons for your dislike have been the reasons for my hesitation.    But I guess by waiting I am only putting off the inevitable. It sounds like the program to do what I want by your description of...

Thanks LD. I figured that was the case. Well for this year it will be a bucket of receipts and an angry accountant.

    Inventory, invoicing, and billing

This has to be the sexiest topic ever posted:) Do folks generally use Quick Books for this or are there any cheaper systems for really small companies like mine?   Right now I just have invoices and spreadsheets that I've built with Excel and Word and I change and move them around manually. Not...

Ingredients you *never* want to see in hot sauce

I'm not so sure about the spinach on your list...I thought about trying some in a green sauce recently.    I'll go along with the all natural crowd and also find it a little off putting when it just says "peppers" Reeeally, peppers. Who'd've thought?   Though not vegetarian myself, I think meat...

review Official Review: Lucky Dog Hot Sauce Black Label

Not that this sauce needs another vote of confidence, but here it is. Lucky Dog Black Label is a seriously well balanced sauce, with sweet and hot balanced perfectly on the scales. I am always a fan of pepper blends as they bring such different styles of heat to the palate, and this one provides...
