I wouldn't definitely double the space comment. I've never fermented peppers but I've fermented bread, beer, kombucha, and other things, and you always get a pretty signifigant C02 output that creates internal pressure and raises liquid levels. An airlock would be best, but at the very least...

Looks delicous. That color is out of this world. One of the few non-fermented sauced I've seen that I'm dying to try.

Looks pretty damn good, been looking to do this myself for a while but my thai's didn't turn out that well. Did you consider fermenting it? Sriracha is usually fermented and it adds to the "earthy/tangy" flavor that it's famous for. Pretty jealous of that stuff, enjoy it.

I have to say unequivically yes. As you can see by my sig this is my all time favorite sauce. Far from the hottest, but one of the tastiest. It goes WITH EVERYTHING!!!
