Na it's sweet, in the marination pic, and especially in the croquetta/fritter pic. Third one from screen left in perfect focus, the rest soft. Awesome!

Ohhh corned beef empies... and they look baked not fried, for empies I dig that... BOOM!
 
Salsalady's Blue, Green & Silver Seahawks Platter-
 
 
Corned Beef Pasties-
in honor of the BLUE collar mine workers who would take meat pies as their lunch, and in honor of hubby's Welsh heritage.
 
Brownies-
in honor of the EverGREEN state ;)
 
Rum Driver- made with SILVER rum 
 
 
Corned Beef Pasties-
Cook the corned beef brisket about 1 hour per pound, add peeled potato chunks and carrots.  Eat some for dinner, save the rest for the meat pies.
Shred about 2 cups cooked corned beef
Chunky-mash about 2 cups cooked potatoes and carrots.
Cook some diced onions and jalapeno (or whatever chile you want) in some of the brisket broth.
 
Mix it all together, set aside.
 
Basic Pastry Crust-
2 1/2 cups flour
1/2 cup ice cold butter
~1/2c ice water
(no salt for this recipe)
Pulse the flour and butter in a food processor until crumbly.  Pulse in ice water until just enough for the crust to hold together. 
Roll out thin, cut circles (or use the whole crust to line a pie plate).
Add a bit of filling on half, rub a bit of water on the edge, fold crust over filling and use a fork to seal the crust edges.
Brush with egg white
Bake @ 350F about 20 minutes until  brown.
 
Brown Gravy-
2 cups beef broth
1tbsp corn starch mixed with 1/4 cup cold broth
dry pepper for heat
Bring broth to a boil, dump in the corn starch mix all at once while whisking well.  Bring back up to boil until thick.
 
Black Bean Salsa
3 cans black beans-drained
1 can corn- drained
3 Roma tomatoes- diced
1/2 Purple Onion- diced
3-4 cloves garlic-minced
1 bunch cilantro- chopped
1 tsp salt
1 tsp chili powder
1 Tbsp tomato paste
juice of 1 large lime
Dump it all in a bowl and mix gently
 
Brownies-
Package mix- follow package directions, use whatever vegetable oil is available (and legal ;) )
