BREAKFAST!!!

I was looking for a breakfast thread and never found one that seemed open-ended enough to post on. So here y'all go!
 
Posty up your breakfast if you like, even if it's cold leftover pizza.
 
No time for words? No problem. Show us your awesome yellowish cell phone camera pic. No obligation to write out a recipe here if you don't want to.
 
Forgot to take a picture until halfway through the meal? Perfect! Selfie photo-op.
 
Whoops! You made brunch instead? That's cool... it counts.
 
 
I'll go first with a take on a Cuban breakfast called Huevos Habaneros. It means Havana Eggs, but it's not made with Habaneros. In fact, it's not traditionally spicy hot. (Cuban meals typically aren't.) So, I had to SoFlo it up a bit and call it something different.

These are eggs baked over sofrito with butter on top in a custard cup for about 12 minutes at 375 F (yolks are still a bit runny). Then topped with more sofrito and garnished with some cayenne powder, but sofrito isn't spicy hot either. So...
 
Sofrito Caliente
 
(Enough for one serving)
 
1/4 cup chopped onion
1 Fresno pepper (cored and chopped)
1 green jalapeno (cored and chopped)
1 clove garlic, minced
1/4 tsp ground cumin
1/4 cup peeled, cored, chopped tomato
olive oil for sauteing
 
Saute the onion and peppers till the onion is translucent. Then add the garlic and cumin for a minute more. Then toss in the tomato for another minute or two. Salt and black pepper to taste.

Once again I turned to a fresh fatalii for breakfast. I sautéed some fatalii and left over pork roast in butter and olive oil and then added Havarti cheese and eggs.  The pork was a little crispy.  Meanwhile, I toasted some lavash bread I found at the global market. Topped lavash cracker with eggs, cheese and pork and some untoasted lavash on the side to soak up the stragglers.  I love breakfast.
 
Happy Labor Day everyone!  Smoked baby backs tonight w/ mango-jicama-corn salad, jalapeno-cilantro slaw, tomato-avocado salad and lemon bourbon iced tea.  A great day of eating (and drinking).

Hot damn!
 
Sunday morning I woke up and the bathroom scale had me a couple pounds lighter than I expected.  So I took appropriate action and cooked up some eggs, chorizo, onion, cheese, diablo sweet and scotch bonnets - quesadilla style.
 
ps: Once I realized my wife had bought whole wheat tortillas I quickly switched them out for regular flour.

Dude, I eat something very similar every weekend, except I never tried sandwiching it with the tortillas. I must try this next weekend. I always use Longaniza instead of the Chorizo. You should try it once, I bet you never go back to Chorizo. Either way it looks like my kind of breakfast!

I have never heard of Longaniza.  I will have to look around and see if I can find it.  If it's pork and it's spicy, I'm in!

gotta do something to get motivated to go make salsa ....AGAIN.....  :sigh:
 
I woke up this morning and noticed there's a leftover burrito bowl in the fridge that my sister brought home from Chipotle so I fried an egg, diced some avocados, and drizzled some sriracha that I've mixed with scorpion powder and it turned out to be a pretty tasty breakfast. I wonder if Chipotle's ever considered selling breakfast burrito bowls because I honestly think this would become a very popular menu item.

Made some drop biscuits this morning and topped em with home made peach and habanero jam sent to my by sirhc76.  The jam is light and perfectly balanced; sweet and peachy with a nice bit of lingering heat on the lips.  Paired with smoked ham off the bone and fried potatoes, it was a wonderful way to start a cold snowy morning!
