Myself. i love using apple cider ving to can my peppers with. Most of the time i use a 1:1 ratio, or more ving because i like them sweet. I add canning salt and garlic. I boil all my jars before hand, and i boil my brine up that i am putting in with my peppers. After i have my brine boiling, i fill my clean jars with the peppers, then fill them with brine. I have a good ph and everything is sterile and seals. HOWEVER, most and the safest way would be still to water bath it after filling and sealing your jars.
