End result is what matters. You may eat the best pork sandwich you've ever eaten in your life, ask the chef how he cooked it, and one of the steps was microwave or sous vide. Many would immediately dismiss it even though they just proclaimed it was the best they'd ever eaten. Instead of trying to accept the process. That's true.

A friend recently put down about 4k on a pit by Klose out of Texas (iirc).  About 4k inches of cooking space in 3 different areas, mounted on a single axle trailer.  The thing is an awesome amount of bbq smoking steel.  Maybe one of these days...   :)

Yep once the market opened up they tech has been getting better and better.  And so many after market items. But the REC TEC has all the upgrades already on board. As always your gonna have yer haters but i'd put my pellet cooked Q against any other and 9 out 10 times i think it's better.  
Ended up going mini - a Green Mountain Grill Davy Crockett, since I really only ever smoke for myself =) ...
