I put ever dang 'thang on a flour or corn tortilla.
 
Thats a taco.
 
Make a bigger taco.
 
Thats a burrito.
 
Its all good.
 
Ever had a brisket and egg breakfast taco?
 
How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?
 
The rules are this.
 
Keep it flour or corn.
 
Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.

I watched a few vids, checked some recipes and decided to do my own thing using a few methods from some recipes I liked.
 
I dug through the freezer and found some leftover mole and pork chunks I need to cook so I went shopping for the other ingredients and the meat is marinating as I type. I'm making regular tacos too for the fam in case they don't like the Birria.

After a cigarette and a drink I got back to it.
I made some taquitos with the oil from the Birria then started making quesadillas, by the time I was done they ate all my taquitos so I had to make more.

The Birria came out awesome, it tasted so good that I didn't even add the mole I saved. This is soup for a cold day that soothes the soul.

And this was a long ass day making a taco but the payoff was awesome.

i got the beer fueled munchies and had some leftover hot italian sausage that was grilled earlier today. pan fried some garlic, onion, sweet orange pepper and cowhorn pepper. and sausages were done in my mini cast iron skillet that i use all the time. this is my pan. there are many others like it but this one is mine! heat from the hot italian sausage plus cowhorn and sriracha hit the spot!

This afternoon I started my simple carne guisada. It cooks for around 3 hours, and then I added instant mexican rice and mexican blend cheese.

I made soup earlier and posted it here then made tacos with it. Freaking Awesome use of leftovers!!
 
I made tacos with corn tortillas cooked on the gas stove burners, added some of the meat shredded, beans and a little of that gravy 
 

Chopped up some sides for decorations! :lol: That's a hatch pepper for a little heat and flavor.

Walla!!!

Topped with salsa verde and the normal american salsa

Time to eat, Nom Nom Nom!!!


 
After letting the soup sit while I ate it reminded me of Taco Bell's beans and cheese. Does anyone remember that? It was refried beans and came in a small container loaded with cheese. They might even still have it.

This is so much better than Taco Bell, it's spoon slurping good!! :D

 
 
Its hard to understand why birria isnt more popular in the US. Ive got 1 stinking restaurant that offers it ALLLLL the way up near where i used to live. Not a single place in "little Mexico" a few minutes away offers it. No beef, no lamb and certainly no authentic goat. Its a simple dish. Some tortillas, a couple limes, some chopped onions and you are basically all set to go.
 
I made beef fajitas with bell peppers, white onions , sweet onions, jalapeños and homemade arbol salsa. The skirt steak got over cooked because I was busy, but they were still awesome. They had been marinating for around 24 hours, so the meat was super flavorful.

And Fredericksburg does rock. Although we are closing on some acreage and a house in Harper (20min away) this next week. We are tired of city living after 4 years of it. Need some space to shoot guns, go mudding and let the dogs and daughter run loose.

My older sister lives in Corpus.
 
My mother and other younger sister live in Georgetown.
 
They like to meet up in Fredericksburg.
 
Do women shit for a day or two.
 
They've done that at least 4 times the last two years.
 
I still don't know what they do there.
 
Because women.

Wine tours mi amigo, thats what the ladies do here. Its a fairly new tourist industry that is booming. When I was a kid people came here for big buck deer hunting and peaches. But those hunters wives created an industry of tourism that has changed everything. Im not saying its a bad thing, but its different than it was. There is still some great food and local beer here though.
