MMMM meatloaf

Ok I literally just made the best meat loaf I have ever had. I used ground chicken instead of ground beef and put bacon spinach cooked in the bacon fat mushrooms and mozzarella cheese.. basically I made a chicken florentine meatloaf... AND IT WAS AWESOME! If anyone wants the recipe lemme know! It didn't have any heat or anything but still very good.

if you wouldnt mind sharing the recipe to both your meatloaf and the biscuits i would like it. my wife says i eat too much red meat. so 2 pounds of this meatloaf might keep her off my back for a day lol
 
Ok, Lets start with the biscuits
You will need:
Bisquick
Water
Salt
Onion powder
Garlic powder
Dried parsley
Butter


make biscuit dough using the bisquick directions
add about 3oz of shredded cheddar cheese to the dough
spoon the dough onto a baking sheet
bake for about 12-15 minutes in a 350 degree oven
while the biscuits are baking:
melt a stick of butter in a bowl or cup
add to the butter;
1/4 teaspoon of salt
1/8 teaspoon of onion powder
1/8 teaspoon dried parsley
1 teaspoon of garlic powder
as soon as the biscuits come out of the oven brush the butter over them


Now for the meat loaf
you will need:
2LBS of ground chicken
1 can of mushrooms
1/2 a pack of bacon
1 10oz pack of chopped frozen spinach(thawed and drained)
1 pack of baby spinach leaves
Italian bread crumbs
Italian seasoning
1 pack of mozzarella cheese
3 eggs


Preheat the oven to 350degrees
cut the bacon into little pieces, then cook them until they are crispy and remove them from the pan BUT LEAVE THE BACON FAT IN THE PAN
Mix 2LBS of chicken, 1 can of mushrooms, about 2/3 of the frozen spinach, about 3 cups of italian bread crumbs, 1 tablespoon of italian seasoning, eggs and bacon pieces together in a bowl.
now take a good handful or two of the spinach leaves and put them in the bacon fat and cook them down
put half of the chicken mixture into a loaf pan
make a little valley in the chicken and put some mozzarella cheese in it
lay the cooked spinach on top of the cheese
put some more cheese on top of the spinach
put the rest of the chicken on top and pack it down
using a thermometer cook until it has an internal temp of 175 degrees
then put a good bit of mozzarella cheese on top of the loaf and put it back in the oven till the cheese gets a little brown

You have now made a Stuffed Chicken Florentine Meatloaf! Let it rest for a little bit then SLICE IT UP AND EAT IT!!!

I would take some pics but after sitting in the fridge over night it just is not picture worthy... :(
But hopefully someone here will make it and take pics fresh out of the oven! :lol:
