recipe Modified Cuban-style Yuca Dish

Yuca (different from yucca) — peel ~2 lbs, cut across into ~2” pieces, cut in half lengthwise, cut out the core from each piece and toss; bring to a boil then simmer for ~15 minutes (til medium soft: stick a fork in it); prepare garnish.

Last garnish I made was 1 med. sweet onion diced, 5 cloves of garlic diced, chop 6 - 7 pieces of cilańtro, 3 serano and 4 large jalapeños seeded & chopped, juice of 1 med. lemon or 1/2 of a large lime, 1/4 cup olive oil: while the yuca is simmering heat oil then sauté onion and garlic; next add lemon or lime juice, cilańtro, peppers and stir. Finish by pouring garnish over the drained yuca in the serving bowl and mix lightly.

Cook the peppers longer to reduce heat if ya want to. Yuca is both delicious and healthy. OMG! This dish is soooo good!
