As far as I know Lactobacillus is natural/organic and is needed for this fermenting process whether you introduce known starters or just rely on what's naturally present in the peppers, air and water

Naturally...lol. I guess all I was saying is that I've never used "starters". Sorry for sounding invalidating.

We still haven't had a freeze yet this year, very cold this last week but no frost. I hope a few survive outside this year, we'll see. Being so close to the ocean helps this time of year. Some years are colder earlier than others.

that warm gulf stream helps Cappy quite a bit...he is close enough to the Atlantic that IMO it definitely tempers the climate...
