Cubanelle's are coming in heavy soooo, couldn't wait any longer, let's pickle. Packed jar with 8 sliced and diced Cubanelle's, 1 Jalapeno, 2 Purple UFO's, black pepper, salt, 1/3 white vinegar,1/3 ACV and 1/3 6yr old smoked Scotch Bonnet Vinegar. Packed on 08/14 and cracked tonight. Wow, clean and bright with suttle lasting heat. The UFO's flavor came thru with mild heat along with the purple contrast. Keeping it in fridge the peppers have stayed crisp for 2 weeks now. Another batch this weekend but with garlic added and using some yellow T-Rex pepper to start with and see how hot it'll be and still have the Cubanelle's up front.
