drying Storing until enough to dehydrate

How do you store your hot peppers (habs and Jolokia) short term (weeks) until you get enough to run the dehydrator ?
Do you put them in vinegar in fridge until dehydrating ?
Thanks
Mike

just put in the fridge and dehydrate when you have a tray full. Then bag the dried peppers and save to turn into powder.

Freezing them has an added +.
The water in the peppers expands and breaks the cell walls of the pepper making them dry out faster in my smoker.

Do not freeze. Dehydrate right away. Why wait?? Freezing changes the pepper. Nothing wrong with small batches of dehydrating.

+1

The first arrivals in the beginning of the season would always be consumed. When the harvest increased beyond our cooking needs then the overflow was always enough to dehydrate small batches. There is a noticeable difference between fresh/frozen.

Good Luck!!
