smoking suggestions please

Hi guys! I am planning to make a smoked barbecue sauce, but i need an idea what is the best tasting peppers to use thats got no heat.. i just want a flavor because my 15 month old toddler loves to eat everything I eat haha but not the superhots.. Im thinking about blending a 3 different kind of peppers.. here's my ingredients..

pepper1: ???
pepper2: ???
pepper3: ???
brown sugar
cumin powder( maybe half a teaspoon only) i dont like it if it too strong
turmeric powder
sesame oil
blackpepper powder
seasalt coarse
tomato paste
kimlan soysauce
roasted garlic
roasted onions
lemon/lime juice
water (maybe) to adjust the thickness
