WANGS for SalsaLady

Nine (9) pounds of WANGS for SalsaLady.
 
Different method this time, used a batter instead of breading.
 
Heat oil to 375°
 
Cornstarch Crunch
2c cornstarch
1c flour
3T seasoned salt
2T baking powder
1.25T each black pepper, paprika, cayenne, granulated garlic and onion
2.75c water
 
Mix dry ingredients, whisk in water till smooth.
Makes enough to batter 8-10lbs of wings.
 
Dredge wings in cornstarch.
 
Batter wings in batches, allow excess to drip off.
 
Fry wings in batches 8-10 minutes, 185° IT on the bone.
 
Toss wings in your favorite sauces.

Served with tater tots, salad, cucumber, celery and homemade super chunky Bleu Cheese dressing.

Yes fridge to dry over night on cookie rack and while they baked made the sauce and oh me crispy and hot ghost oregano buttery deliciousness 425*thirty minutes flipped and twenty more I let it rest and finished the sauce bathed them.

On topic....50/50 sauce and butter for wing sauce is the best way to start. The original wing sauce was a vinegary sauce and butter. Anything like that will be good.

It's the once a week shopping thing. I just kinda forgot the chicken was bought on last weeks shopping trip, a week ago Friday June 26th. That would be purchased ~June 18.




My Dollah Store is 45 miles away. Costs more in gas to get there than what I'd save. Plus the only thing I really look for at the Dollah Store is canned potato salad. TB knows what I'm talking about.
