    You guys don't use red wine? Shame on you. Burgundy is where it's at. Stout also makes a good variant. Guinness of course. In the Guinness version put 2 tablespoons whole grain mustard into the liquid.

    thinly sliced thumb melts nicely, and offers a earthy note, if you turn it into an au gratin. Just don't tell anyone. It'll be the best side they ever tasted!

    Actually none of it made it into the potatoes. It was suck a quick slice that I knew it happened and made it to the sink before the blood came. But, when it did, it REALLY did.
