    I do. But we were looking at videos this morning of how to cure and cold smoke your own bacon. I need one that can stay steady at 130° F. No way I'm getting my charcoal smoker that low for 12 hours. Now I need to find a pork belly and some curing salt!!!

    I was also checking out those clay pot smokers that people are making themselves... seen one of those? Pretty cool! The Bradley smoker is also good say, if you wanna do a brisket overnight or during a time where you can't really babysit it and add coals. I'm usually pretty strongly against anything that isn't charcoal, but I do like the option. NOTHING beats the ritual of drinking beer out back with my charcoal going, though!

    lol... yep... for kicks and giggles. I wrote to them and called them out. Last year (my first grow) I ordered from them and got nothing but habs and bell peppers. NOT what I ordered! Check the Pepper I.D. forum in a couple of minutes to see what the experiment is.

    Nice. I ordered about a dozen varieties this season. I think there's only about three varieties, as far as I can tell so far.

    btw - Garlic, onion, salt - I consider those staples. None of those flavors step on any other. You could use those in every sauce.

    Definitely. Those are the holy trinity. They're the only thing from making tropical hot sauces taste like spicy fruit salads. I used those yesterday... Need to double up on the salt.
